Chicken Parmigiana
- 4 whole boneless chicken breasts
- 3 slightly beaten eggs
- 1 tsp. salt
- dash of pepper
- 1 c. bread crumbs
- 1/2 c. oil
- 2 c. tomato sauce
- 1/2 tsp. basil
- 1/4 tsp. garlic salt
- 2 Tbsp. butter
- 3/4 c. Parmesan cheese
- 8 oz. shredded Mozzarella cheese
- In a bowl, mix bread crumbs with salt and pepper; set aside. Lightly pound each chicken breast and dip in egg mixture, then in bread crumbs.
- Brown quickly in hot oil and remove to casserole. Remove excess oil.
- Add tomato sauce and spices to skillet.
- Heat to boiling, then simmer for 10 minutes.
- Add butter and pour this over chicken.
- Sprinkle generously with Parmesan cheese, cover and bake at 350u0b0 for 30 minutes.
- Top with grated Mozzarella cheese and bake 10 minutes longer, uncovered.
- Serves 4 generously.
