White Christmas Cake
- 1 1/2 cups seedless raisins (light)
- 1/2 cup candied peel
- 1/2 cup cherries
- nuts
- 16 tbs. butter with salt. (Do not use margarine)
- 1 1/4 cups white sugar
- 4 eggs, beaten
- 2 cups and 3 tbs. flour (all-purpose)
- 1 tsp Baking Powder
- 2/3 tsp. salt
- Juice of one orange, and 1 lemon
- Scald raisins, let stand 10 minutes, drain and let dry. Put your fruit, raisins, peel, cherries and nuts in one bowl.
- Measure and sift dry ingredients 2-3 times. Use 1/4 of this mixture to coat fruit and nuts.
- Cream butter and sugar until light and fluffy. Add fruit juice, beat. Add sifted dry ingredients alternatively with eggs, creaming well after each addition.
- Fold in fruit mix. Bake in a regular size bread pan at 275 for 3 hours. Test.
