Chicken And Rice Soup
- 2-3 chicken breasts
- 1 packet of success rice (natural grain brown rice)
- 2 boxes of organic chicken broth
- 2-4 long carrots
- 1 cup of chopped celery
- 1/2 cup of chopped onions
- 1 clove of garlic
- 1 Package of mushrooms, sliced
- Flour
- Salt
- Pepper
- Butter
- 2-4 tbsp. of cooking sherry
- 1. Rinse chicken, vegetables, and mushrooms thoroughly
- 2. Lightly batter breasts with salt, pepper, and flour
- 3. Sear breasts in a saute pan (with some garlic)
- 4. Boil breasts for 10 minutes, then set aside
- 5. Saute the celery, onions, and carrots in some butter and seasoning (salt, pepper, and garlic)
- 6. Cut or shred chicken breasts as preferred
- 7. Add chicken in vegetables to a large pan with chicken broth
- 8. Add rice to broth
- 9. Bring almost to a boil and cook for 10 minutes
- 10. Add sliced mushrooms and cook for another couple of minutes
- 11. Add a couple of tablespoons of cooking sherry and serve hot.
