Mrs. Brooks' Lemon Bars
- 1 cup butter softened
- 1/2 cup powderes sugar
- 2 1/2 cups all-purpose flour
- 4 eggs
- 2 cups granulated sugar
- 1/3 cup freshly squeezed or minute made 100% lemon juice
- 1 teaspoon baking powder
- 2 tablespoons powdered sugar
- In a large bowl, cream together butter and 1/2 cup powdered sugar until light and fluffy. Add two cups flour, beating until blended. spread evenly over the bottom of a well-greased 9x13 inch pan. Bake in a preheated oven (350 degrees) for about 20 minutes or until golden.
- Meanwhile, in a small mixing bowl, beat eggs until light and foamy. Gradually add granulated sugar, beating until thick and blended. Add lemon juice, remaining 1/2 cup of flour, and baking powder, beating until blended thoroughly. Pour lemon mixture onto crust and bake for an additional 25-30 minutes, until the custard is set and golden. Remove from oven and sprinkle with remaining powdered sugar. To serve, cut into small squares or bars (makes about 20 bars).
