Chicken, Grilled

  1. Pre-heat a skillet (non-stick is easiest but either one that has a lid or find something you can use as a lid - i.e. pizza pan, lid to another pot, etc) to medium heat with 1 teaspoon of olive oil.
  2. Look at the thickness of the chicken piece(s); if it is unevenly thick, or so thick you're worried it will take forever to cook, butterfly cut it (like a hamburger bun) so that the thickness is more even.
  3. Rub some of the olive oil on the chicken piece(s) then season with salt, pepper, and any other desired seasonings.
  4. Place the chicken piece(s) in the pan and cook, uncovered, about 8 to 10 minutes; until the edges are opaque instead of pink.
  5. Flip the chicken breast over, cover, reduce the heat a little bit, and cover another 8-10 mins. Remove from the pan.
  6. DO NOT CUT INTO THE CHICKEN BREAST for at least 10 minutes. Let it "rest" on a plate somewhere for this time before serving it.
