Your New Favorite Portabella Mushroom Sandwich
- 2 Portabella Mushrooms
- 1 Cup of Alfalfa Sprouts
- 1/2 Medium Yellow Onion
- 1 Medium Red Pepper
- 1 Avocado
- 8 Slices of Wheat Bread
- 4 Tablespoons of Olive Oil
- For Dressing:
- 1/4 Cup Olive Oil
- 1 Tablespoon of Grated Parmesan Cheese
- 1/2 Tablespoon of Basil
- 1 Teaspoon of Salt
- 1 Teaspoon of Pepper
- 1 Clove of Garlic
- Cut the stem off of the mushrooms and cut into 1/4 inch slices. Slice the red pepper into 1/4 strips. Cut the onion so that you leave the "circles" intact (like onion rings). Either saute everything together in a big non-stick frying pan with the olive oil for 7-9 minutes over medium heat, or divide the vegetables into their own pans and saute each for 7-9 minutes (use 2 tablespoons of oil for mushrooms and 1 each for pepper and onion). Remove from heat.
- You want the onions to brown a little and for the mushrooms to get tender (but not completely floppy).
- To make the dressing, finely dice the garlic and mix all of the ingredients (oil, salt, etc.) together in a small dish.
- To serve, place a layer of mushroom slices on a slice of bread, then a layer of mushrooms, 3-4 strips of red pepper, 1/4 cup of sprouts and spoon out the dressing on the sandwich.
- Serve open-face with the second slice of bread to the side to show off the inside of the great sandwich you just made! It's colorful and loves to show off!
