Curry Sweet Potato, Peanut And Veg Soup
- 1tbs olive oil
- 1 clove garlic
- 1 small onion, diced
- 1 carrot, cut into half moons
- 1 celery, diced
- 1 sweet potato
- 1 bay leaf
- 1 tbs tomato paste
- 3-4 cups liquid (water or stock)
- 1/4 tsp cumin
- 1/2 cup frozen peas
- 1/4 tsp garam masala
- 1 tbs peanut butter
- 1 tsp fresh basiil
- salt and pepper to taste
- In a soup pot on med heat, sweat onions, celery, garlic and carrots in olive oil.
- add liquid, tom paste, sweet potatoes, bay leaf and cumin.
- simmer for 20 min, or until veg is tender.
- add peanut butter, garam masala.
- using a blender or masher, puree a potion of the soup to thicken it up.
- add basil and peas. return to heat bring to a simmer.
- season with salt and pepper
