Ginger Snaps

  1. Beat on medium speed until fluffy and well blended
  2. 12 Tbsp. butter (1 1/2 sticks)
  3. 1 2/3 cup sugar
  4. add and beat until well combined
  5. 2 large eggs
  6. 1/2 cup dark molasses
  7. 2 tsp. lemon juice
  8. 1/4 tsp. grated lemon zest
  9. Pull of pieces of dough and roll into 1 inch balls. Space 1.5" apart on baking sheets and pat down slightly to flatten
  10. bake 10 - 13 minutes at 350 makes 6 dozen
