Ginger Snaps
- 3 3/4 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 4 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1/4 tsp. salt
- 12 tbsp. butter (1 1/2 sticks)
- 1 2/3 cup sugar
- 2 large eggs
- 1/2 cup dark molasses
- 2 tsp. lemon juice
- 1/4 tsp. grated lemon peel
- Beat on medium speed until fluffy and well blended
- 12 Tbsp. butter (1 1/2 sticks)
- 1 2/3 cup sugar
- add and beat until well combined
- 2 large eggs
- 1/2 cup dark molasses
- 2 tsp. lemon juice
- 1/4 tsp. grated lemon zest
- Pull of pieces of dough and roll into 1 inch balls. Space 1.5" apart on baking sheets and pat down slightly to flatten
- bake 10 - 13 minutes at 350 makes 6 dozen
