Pineapple Bbq Chicken Pita

  1. Wash and trim chicken. Place chicken in freezer size storage bag and pour in entire can of coke. Let marinate in refrigerator for 15 minutes.
  2. Peel, core and slice the pineapple into 1/2 inch thick slices (this can be done ahead to save time, or you can purchase a can of already sliced pineapple). Sprinkle the slices with the brown sugar and set aside. Remove chicken from bag and grill over medium flame until juices from chicken run clear and center is no longer pink. While chicken is grilling, place pineapple and pita breads on grill just long enough to leave grill marks on both sides of each. Brush chicken breasts with BBQ sauce and leave on grill while you assemble the pita. Remove pita from grill and place on serving plate. While still hot, sprinkle with cheddar cheese and add pineapple slice. Top with chicken breast and serve.
