Hawaiian Island Style Chicken
- 1 (8 oz.) can pineapple chunks
- 2 lb. chicken parts
- 2 Tbsp. shortening
- 1 can Campbell's chicken broth
- 1/4 c. vinegar
- 2 Tbsp. brown sugar
- 2 tsp. soy sauce
- 1 large clove garlic, minced
- 1 medium green pepper, cut into squares
- 3 Tbsp. cornstarch
- 1/4 c. water
- Drain pineapple, reserving liquid.
- In skillet, brown chicken in shortening; pour off fat.
- Add reserved pineapple juice, broth, vinegar, sugar, soy sauce and garlic.
- Cover and cook 40 minutes. Add green peppers and pineapple chunks and cook 5 minutes or until chicken is tender.
- Stir occasionally.
- Combine cornstarch and water; gradually add to mixture and cook until thickened.
- Serve with cooked parsley rice.
