Hawaiian Island Style Chicken

  1. Drain pineapple, reserving liquid.
  2. In skillet, brown chicken in shortening; pour off fat.
  3. Add reserved pineapple juice, broth, vinegar, sugar, soy sauce and garlic.
  4. Cover and cook 40 minutes. Add green peppers and pineapple chunks and cook 5 minutes or until chicken is tender.
  5. Stir occasionally.
  6. Combine cornstarch and water; gradually add to mixture and cook until thickened.
  7. Serve with cooked parsley rice.
