Monastary Cheese Cake
- 2 3 ounce packages cream cheese at room temperture
- 1/2 pint sour cream
- 3 eggs
- 1/2 cup plus 2 tablespoons sugar
- 1 1/4 cups graham crackers
- 1 1/2 teaspoons vanilla
- 1/2 teaspoon cinnamon
- 3 tablespoons melted butter
- Crust:
- Mix together crackers, cinnamon and melted butter. Press into buttered 8 inch pan
- Filling:
- Beat eggs well and add 1/3 cup sugar and continue beating. Add cheese piece at a time and 1 teaspoon vanilla. Beat well, pour on top of crust. Bake at 35o oven for 25 to 30 minutes. Test with cake tester. Remove from oven cool refrigerate.
- Topping:
- Mix sour cream 2 tablespoons sugar and 1/2 teaspoon vanilla. Spread on cake and return to oven 5 minutes, remove and cool refrigerate
