Chicken Lasagna Roll-Ups
- 1 pkg. no cook/oven ready lasagna noodles or prepare lasagna as pkg. directs and drain
- 1 lb. ground chicken
- 1/2 lb. fresh spinach, lightly steamed and chopped
- 1 tsp. salt and pepper
- 1/2 tsp. nutmeg
- 1 c. hot milk
- 1 Tbsp. butter or margarine
- 2 Tbsp. all-purpose flour
- 1 (20 to 22 oz.) can tomato sauce (flavored or plain)
- In a large nonstick pan, cook chicken in 1 tablespoon vegetable oil for 5 to 7 minutes. Add spinach and seasonings. In a saucepan, melt butter. Stir in flour to form a paste. Gradually add hot milk, stirring all the time until mixture comes to a boil and thickens. Stir in chicken mixture. Spread a little of the chicken mixture onto each of the lasagna noodles. Roll up tightly and secure with a toothpick. Place in a single layer in a casserole dish. Spoon over tomato sauce. Cover and bake at 350u0b0 for 30 to 40 minutes or until lasagna noodles are tender.
