Mexican Fish Tacos
- 1 pound halibut or orange roughy
- 1/4 cup tequila
- 2 tablespoons lime juice
- 1 fresh jalapeno finely chopped
- 1/4 tsp ground cumin
- 2 garlic cloves minced
- 8 8-inch flour tortillas
- 1 1/2 cups shredded lettuce
- 1 cup sliced red pepper
- 1 medium red onion thinly sliced
- snipped fresh cilantro
- 1 mango sliced
- 1 avacado sliced
- 1/4 cup mayo, 1/4 cup sour cream
- 1 tbsp lemon juice
- in a small bowl stir tequila, line juice, jalapeno, cumin and garlic. Marinate fish in a shallow dish with marinate on top refridgerated for 30 mins. Preheat oven to 350. Wrap tortillas in foil and heat 10 mins. Preheat Broiler. Grease baking pan and broil fish 3 7 mins until flakes with a fork. Break fish with a fork into 1/2 inch chunks.
