Gratin Of Cauliflower With Gruyere

  1. Preheat oven to 400 degrees
  2. place cauliflower in heat proof backing dish coated w/Pam.
  3. spray Cauliflower and sprinkle with salt, toss, and back at 400 degrees for 30 minutes.
  4. Cool 5 minutes
  5. preheat broiler
  6. melt butter in saucepan. stir in breadcrumbs and 1/4 c cheese and chives.
  7. Heat saucepan and spray.
  8. Add onion and saute til soft
  9. Add garlic and saute 1 minute
  10. Add flour and cook 1 minute, stirring constantly
  11. Slowly add milk, whisk and cook until thick, about 3 minutes.
  12. Add remaining cheese
  13. Remove from heat and add salt, parsley, and pepper.
  14. Pour over cauliflower, Toss
  15. Top evenly with bread crumb mixture.
  16. Broil 3 minutes or until golden brown and thoroughly heated.
