Lobster Pasta In A Roasted Corn,Sweet Bacon Cream

  1. ROASTED CORN
  2. 1-cut off corn from cob.save
  3. cob
  4. 2-spread corn out on sheet tray and sprinkle with montreal.bake at 375 til desired browning
  5. 3-set aside to cool
  6. SWEET BACON
  7. 1-lay out bacon on sheet tray
  8. 2-spread honey over bacon
  9. 3-sprinkle brown sugar over bacon
  10. 4-bake at 375 til done
  11. 5-reserve liquid and cool bacon,then chop into small pieces
  12. CREAM BASE
  13. 1-in large pot add corn husks,heavy cream,shallots.
  14. 2-bring to a boil,reduce to simmer and reduce by 1/3 about 2 hours
  15. 2-when reduced remove husks and shallots
  16. 3-add roasted corn,basil,oregeno and simmer 30 more minutes,set aside
  17. ASSEMBLY OF DISH
  18. 1-heat large saute pan over medium heat.
  19. 2-add olive oil and lobster meat,saute 1 minute.
  20. 3-add chopped bacon saute 1 more minute
  21. 4-add 3 cups cream base,reserved bacon liquid(more or less to your likeness)
  22. 5-add cooked pasta til heated through,stir in butter,chives and salt and pepper to taste.serve and wait for the compliments to roll in
