Rocket Brownies
- 2 sticks (1 cup) of unsalted butter
- 6 ounces fine-quality unsweetened chocolate
- 1 cup unsweetened cocoa powder
- 1 TB of freshly ground coffee
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- Put oven rack in middle position and preheat oven to 350u0b0F. Grease a 9-inch square baking pan (2 inches deep) and line bottom and sides with wax paper, then butter paper.
- Melt butter, chocolate, cocoa powder and coffee in a medium heatproof bowl set over a saucepan of simmering water, stirring occasionally, until smooth.
- Whisk together flour, baking powder, and salt in a small bowl.
- Whisk together sugar, eggs, and vanilla in a large bowl, then pour in chocolate mixture, whisking until combined well.
- Whisk in flour mixture and transfer batter to baking pan.
- Bake for about 35 minutes for fudgy brownies.
- (a wooden pick or skewer will not come out clean)
