Mushroom-Mesclun Melt
- Big handful of mesclun or other mixed greens, rinsed and spun dry
- Two thick slices of Multigrain Bread
- Two slices of mozzarella
- cheese
- 8-10 fresh mushrooms any variety or a mix, sliced thickly
- Drizzle of olive oil
- Sprinkle of fresh rosemary
- Splash of red wine
- Salt and freshly ground pepper
- Heat two pans over medium heat. Drizzle a little olive oil in both.
- In one pan, begin toasting the bread slices.
- In the other pan, add the mushrooms and stir occasionally until begining to brown.
- When the toast is golden brown on one side, flip it over and place the cheese slices on it. Just about the same time, your mushrooms should be golden brown so add a sprinkle of rosemary and a splash of red wine. Let this simmer together until slightly reduced.
- When the cheese is melty, place the greens on a plate, top with the toasts, spoon the mushrooms and sauce over them and enjoy!
