Polynesian Chicken

  1. Cut chicken in strips 1/2-inch wide.
  2. Place chicken in a 2-quart casserole.
  3. Cover dish with lid or vented plastic wrap. Microwave at High for 4 to 5 minutes or until chicken is no longer pink, stirring twice.
  4. Remove chicken from casserole and set aside.
  5. Discard juices.
  6. In same casserole, combine green pepper and next 4 ingredients.
  7. Cover dish and microwave at High for 4 to 5 minutes or until vegetables are tender-crisp, stirring once. Drain if desired.
  8. Combine gravy, soy sauce and ginger.
  9. Stir into vegetables.
  10. Return chicken to casserole.
  11. Add pineapple.
  12. Cover dish and microwave at High for 4 to 5 minutes, until thoroughly heated, stirring twice.
  13. Serve chicken over cooked rice.
  14. Makes 4 servings.
