Low-Fat Prune Spice Tea Bread
- 1-1/4 cup all purpose flour
- 1 cup oats ground fine to a flour consistency in your blender
- 1/2 t baking soda
- 1 t baking powder
- 1/2 t salt
- 1/2 t ground ginger
- 1/4 t allspice
- 1 t cinnamon
- 1/4 t ground cloves
- 1/2 t cardamom
- 1/2 t coriander
- 1/2 cup dried cranberries
- 1 egg + 1 egg white
- 1 cup prunes + 1/2 cup orange juice blended to a smooth puree
- 1/2 cup plain non-fat yogurt or goat milk yogurt
- 1/4 cup low-fat milk or soy milk
- 1/4 cup Grade B maple syrup
- 2 T walnut or canola oil
- Preheat oven to 350. Lightly grease a loaf pan with 1/2 tsp canola oil. Combine all dry ingredients in a medium bowl. In large bowl, lightly beat the eggs, then add all other ingredients and stir by hand until well combined. Add dry ingredient and stir by hand until combined. Pour into prepared loaf pan, smoothing out the top. Bake for 35-40 minutes, until toothpick inserted in center comes out clean.
