Italian Mini-Meatloaves
- 1 lb ground beef
- 1/2 cup bread crumbs
- 4 strips bacon
- 1 egg
- 1 cup mozzarella, shredded
- 1/4 cup feta, crumbled
- 1 tsp. parsley
- 1 tsp. garlic powder
- 1/2 tsp. of each of the following: oregano, basil, thyme
- 1/2 onion, minced
- 4-8 ounces sliced mushrooms
- Parmesan cheese, to taste
- Fry up the bacon until it's crispy, then crumble it. Use the bacon drippings to cook the chopped onions and mushrooms.
- While that cooks, set the oven to 350 degrees. Blend the egg, bread crumbs, herbs and cheeses in a large bowl until thoroughly mixed. Add the ground beef, then add the cooked onions and mushrooms (it doesn't matter if this is still hot).
- Scoop the meat mixture into an ungreased cupcake pan and stick it in the oven for 15-20 mins (or until the centers are 160 degrees).
- They'll have cooked in their own juice/grease, so scoop them out of the cupcake pan as soon as they come out of the oven to keep the fat from settling back into the meat.
