Brown Rice & Vegetable Stuffed Peppers

  1. 1. Cook Rice ~ until slightly tender
  2. 2. Saute all veggies in olive oil,sea salt,and freshly ground pepper
  3. 3. Add the tomatoes
  4. 4. Add the rice
  5. 5. Fill 3 larger bell peppers. Take the extra filling and scoop it around the filled peppers in covered pot or casserole dish
  6. 6. * spread tomato paste on top of all
  7. 7. Cover and bake @ 350 until your peppers are tender
  8. 8. Enjoy!!
