Date Orange Cake

  1. Roast chopped pecans in 350 degree oven for
  2. 5 minutes, until lightly browned.
  3. Pour boiling water over dates combined with
  4. soda and let cool to room temperature.
  5. Cream butter and sugar with mixer until light .
  6. Add orange rind and egg and beat well.
  7. Sift flour,measure, and sift again with spices and baking powder. Add alternately with milk to
  8. creamed mixture, beginning and ending with
  9. dry ingredients.
  10. Add date mixture and pecans. Pour batter into
  11. a buttered and floured 9 inch by 5 inch loaf
  12. pan. Place in a 350 degree oven and bake for
  13. about 55 minutes, until a skewer put in cake
  14. comes out clean.
  15. Run a sharp knife around edges of loaf and
  16. turn cake out on large serving plate with a
  17. raised rim.
  18. Make orange glaze while cake is baking.
  19. Blend sugar, flour, and cinnamon in small pan.
  20. Add orange juice and simmer on stove top at
  21. medium /low heat for 8 minutes.
  22. Pour hot orange glaze over hot
  23. cake. Cool to room temperature . Slice into
  24. 1/2 inch slices and serve.
