Mr. BillS Chicken And Sausage
- 2 LARGE POTATOES - PEELED AND CUT INTO BITE SIZE PIECES
- 1 1/2 LB. HOT ITALIAN SAUSAGE
- 1/4 CUP OLIVE OIL
- 4 CLOVES OF GARLIC - CRUSHED
- 3 LB. CHICKEN CUTLETS CUT INTO CHUNKS
- 2 CUPS OF SEASONED FLOUR
- 1 MEDIUM ONION - SLICED
- 1 GREEN BELL PEPPER - 1/2 INCH DICE
- 1 RED BELL PEPPER - 1/2 INCH DICE
- 2 6-OZ. JARS OF ARTICHOKE HEARTS - DRAINED
- 1 10 OZ. PACKAGE OF MUSHROOMS - SLICED
- 2 TSP. ITALIAN SEASONING
- 2 TSP. OREGANO
- 2 TSP. BASIL
- 1 CUP DRY WHITE WINE
- 4 CUPS OF HOMEMADE TOMATO SAUCE
- 2 PKGS. SAZON
- 1/4 CUP PARMESAN CHEESE
- COOK POTATOES IN BOILING WATER. IN A LARGE SKILLET FRY SAUSAGE UNTIL COOKED. REMOVE FROM SKILLET. LET COOL AND SLICE. ADD OLIVE OIL AND GARLIC TO SKILLET. DREDGE CHICKEN IN SEASONED FLOUR AND BROWN IN 1/2 OF THE OLIVE OIL. REMOVE FROM SKILLET. ADD ONION AND PEPPERS AND SAUTE IN REMAINING OLIVE OIL. WHEN ONION IS SOFT ADD ARTICHOKES, MUSHROOMS, ITALIAN SEASONING, OREGANO AND BASIL. COOK 2 MINUTES THEN ADD WINE. COOK 3 MINUTES. ADD TOMATO SAUCE AND SAZON AND COOK FOR 5 MINUTES. ADD CHICKEN, SAUSAGE, POTATOES AND CHEESE AND SIMMER ON LOW HEAT FOR 25- 30 MINUTES.
