Banana Coconut Loaf
- 1 cup toasted oat bran
- 1 cup spelt or white flour
- 1 tsp baking soda
- 1/3 cup brown sugar + 1 dropper full of liquid stevia (or 1 cup brown sugar, no stevia)
- 3/4 tsp baking powder
- 1/2 tsp salt
- 1 tsp each vanilla extract & almond extract
- 1 handful unsweetened coconut flakes
- 2 eggs, lightly beaten
- 1/3 cup canola oil (or 1 stick melted unsalted butter)
- 1/2 cup apple sauce (+ 1 cup more if skipping bananas)
- 1 1/2 medium mashed bananas
- 1 cup chopped toasted almonds
- preheat over to 350
- mix wet ingredients and dry ingredients (except for nuts) separately and then combine - do not over stir.
- pour batter into a loaf pan lined with wax or parchment paper and sprinkle almonds on top.
- Bake for 50 minutes.
