Canterbury Beef And Potatoes
- 1/2 small sweet onion
- 10 cloves fresh garlic
- 3 T. butter or margarine
- 6 large Klondike Rose or red potatoes, cubed
- 1 lb. stewing beef or cubed sirloin
- 6 cups of hot water
- 3 sprigs fresh rosemary
- salt and pepper
- 1/2 pound fresh green beans
- In large stockpot, melt butter over low heat.
- Cut onion, peel garlic and add to chopper--finely mince.
- Add onion and garlic to stockpot, stir into butter and cook for about 3 minutes.
- Cut potatoes into cubes. Add to pot and stir well.
- Add water and stir well.
- Add pepper and salt to taste.
- Place 3 sprigs of rosemary to top of mixture.
- Cover pot and cook for about 45 minutes at a simmer.
- Add green beans and cook for an additional 15 minutes.
- Serve in a bowl. Cover with breadcrumbs.
- Goes well with Cheesy Baguette.
