Pecan And Caramel Slice

  1. Preheat oven to 160u0b0C (fan oven). Grease and line an 18cm x 28cm tin.
  2. Base
  3. Beat egg and sugar until thick and pale. Add oil and beat until well combined. Fold in combined, sifted flours. Spoon into prepared tin and pat out with your hands to cover base evenly. Bake for 15-20 minutes until puffed and golden.
  4. Topping
  5. Melt butter with sugar and syrup over a low heat. Stir for 5 minutes until butter melts and sugar dissolves. Simmer, without stirring for 10 minutes until caramelised, add nuts.
  6. Pour topping over base and work quickly spread evenly. Bake for another 10-12 minutes. Cool in pan. Drizzle over melted chocolate. Cut into pieces to serve.
