Charmoula (Spice Paste)

  1. 1. Grind the garlic and ginger to a paste with a mortar and pestle or in a food processor. Add the parsley, cilantro and lemon zest; coarsely mash. Stir in the lemon juice. Stir in the paprika, red pepper, cumin, bay leaf and saffron; grind to incorporate.
  2. 2. Slowly pour in the olive oil, blending to form an emulsion; stir in the salt. Cover; refrigerate to blend flavors, about 8 hours.
