Banana Nut Muffins
- 1/2 cup grape nuts cereal
- 3/4 cup skim milk
- 1 3/4 cups whole grain pastry flour
- 1 1/2 tsp baking powder
- 1/2 tsp bakind soda
- 1/4 tsp salt
- 2 large eggs
- 3 Tbsp Sugar
- 2 Tbsp Canola Oil
- 2-3 ripe medium bananas, mashed
- 1/2 coarsely chopped walnuts (or other type)
- 1. Preheat oven to 375 F. Spray muffin tin with cooking spray
- 2. In a medium bowl, soak the cereal in the milk for 10 minutes, until softened
- 3. In a large bowl, sir together the flour, baking powder, baking soda, and salt. With a fork, beat the eggs, sugar, and oil into the soaked cereal. Stir in the mashed bananas and half of the walnuts
- 4. Pour the banana mixture into the dry ingredients and stir just until blended. Spoon evenly into the muffin tin, filling each about 3/4 full. Sprinkle the remaining walnuts over the top. Bake for 15 to 20 minutes, or until the muffins are browned and firm to the touch. Turn the muggins out onto a wire rack to cool
