Linguini With Clam Sauce
- 1 lb Linguini or spaghetti, cooked
- 2 tbsp butter
- 2 tbsp olive oil
- 2 cloves garlic, minced or crushed
- 2 tbsp flour
- 2 7 oz cans chopped or minced clams
- 1/2 tsp dried thyme
- 1/2 tsp dried basil
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 4-6 tbsp cream
- Heat butter and olive oil of medium heat in a skillet. Add garlic and cook about 1 minute. Stir in flour. Cook and stir roux for a couple of minutes. Add clams along with all of tthe juice. Stir and continue cooking until thick. Add spices. Cook a for several minutes to blend the flavors and eliminate the raw flour taste. Add cream to taste. Cook until bubbly. Stir in parsley. Serve over pasta. Top with freshly grated parmesan cheese if desired.
