Turkey Sausage Stuffing
- 2 T. oil
- 2 1/2 c. chopped celery (with leaves if you want)
- 1 1/2 c. chopped onion
- 1 lb sausage (I use Jimmy Dean)
- 1 c. rich broth, beef
- 4 c. dry breadcrumbs (bag bread cubes from store?)
- 1 c. toasted slivered almonds
- 1 c. sliced mushrooms
- 1/4 c. chopped parsley
- 1/4 c. chopped chives or scallions
- 1 t. salt
- 1 t. thyme
- 1 t. sage
- black pepper to taste (or white pepper)
- 1/4 t. nutmeg
- 1/4 t. marjoram
- 2 eggs
- 4 T. half and half
- Saute onion and celery in oil.
- Remove to a large bowl.
- Brown sausage, add to bowl.
- Stir breadcrumbs into excess fat and stir, tossing to combine. (Can be prepared up to one day ahead, refrigerate).
- Add ingredients through spices. Toss to combine thoroughly. Beat eggs and cream. Pour over mixture and toss lightly. Stuff turkey or bake in greased dish, covered, at 350 degrees for 45 minutes. Moisten with additional broth as needed. Makes 12 servings (depending on who is eating it). Enjoy!
