Falafel Pasta

  1. Mix one part falafel mix with one part water. 1 cup dry to 1 cup water. Mix well and let sit for 15 minutes in fridge.
  2. Cook pasta in a 6 quart pot of boiling salt water until al dente. Drain pasta.
  3. Heat two tablespoons of oil on medium flame in a large pan. Pour falafel mix into heated oil and spread out in pan. Let the falafel cook for a few minutes until starting to set. Then scramble the falafel into smaller pieces. Cook until browned and broken into smaller pieces and chunks.
  4. Heat sauce in the 6 quart pot on medium heat. Add cooked falafel and pasta to the pot. Stir well and remove from heat when heated thru.
  5. Serve with parmesean cheese sprinkled on top.
