Falafel Pasta
- 1 box of whole wheat pasta (penne, macaroni, anything with twists or bends works best)
- 1 box of falafel mix
- 1 jar of tomato sauce
- 2 Tbsp of vegetable or olive oil.
- Mix one part falafel mix with one part water. 1 cup dry to 1 cup water. Mix well and let sit for 15 minutes in fridge.
- Cook pasta in a 6 quart pot of boiling salt water until al dente. Drain pasta.
- Heat two tablespoons of oil on medium flame in a large pan. Pour falafel mix into heated oil and spread out in pan. Let the falafel cook for a few minutes until starting to set. Then scramble the falafel into smaller pieces. Cook until browned and broken into smaller pieces and chunks.
- Heat sauce in the 6 quart pot on medium heat. Add cooked falafel and pasta to the pot. Stir well and remove from heat when heated thru.
- Serve with parmesean cheese sprinkled on top.
