Tofu Marinated In Asian Citrus Pesto Sauce
- 16 oz of unflavored extra firm tofu, cut into 1" cubes
- For the marinade:
- 1 bunch cilantro leaves
- 3" piece of ginger root, peeled and coarsely chopped
- 2 small serrano chillies, stems and seeds removed and cut lengthwise
- 1/2 cup fresh lemon juice
- 1/4 cup olive oil
- 1/2 to 3/4 cup chopped walnuts
- Salt and pepper to taste
- Using a Cuisinart or a blender, combine all the marinade ingredients together in the bowl and pulse until you get a paste that is midway between coarse and fine, so that you can still feel the crunchy texture of the walnuts.
- Place the cubes of tofu in a small, flat baking dish lightly greased with olive oil or PAM and pour the marinade over the tofu until well coated.
- Marinate for an hour, then bake in a pre-heated 350 degree oven for 25 mins.
- Serve immediately with nutty wild rice and green beans lightly sauteed in olive oil and garlic.
