Tofu Marinated In Asian Citrus Pesto Sauce

  1. Using a Cuisinart or a blender, combine all the marinade ingredients together in the bowl and pulse until you get a paste that is midway between coarse and fine, so that you can still feel the crunchy texture of the walnuts.
  2. Place the cubes of tofu in a small, flat baking dish lightly greased with olive oil or PAM and pour the marinade over the tofu until well coated.
  3. Marinate for an hour, then bake in a pre-heated 350 degree oven for 25 mins.
  4. Serve immediately with nutty wild rice and green beans lightly sauteed in olive oil and garlic.
  5. Enjoy!
