Vegetable Cheese Bake (Eggplant Pizza)

  1. In large skillet, heat margarine.
  2. Saute onion and pepper for three minutes.
  3. Add eggplant and mushrooms.
  4. Saute 3 minutes.
  5. Add tomatoes and seasonings.
  6. Cook 1 minute.
  7. Spread stuffing mix over bottom of casserole.
  8. Layer half the vegetable mix, one cup cheese and the remaining half of the vegetable mix.
  9. Cook 30 minutes at 350u0b0.
  10. Sprinkle with remaining cheese and bake 10 minutes longer.
