Vegetable Cheese Bake (Eggplant Pizza)
- 4 Tbsp. margarine
- 1 onion, coarsely chopped
- 1 large green pepper, seeded and cut in 1 inch squares
- 1/2 lb. fresh mushrooms, sliced
- 1 small eggplant, pared and cut into 1 inch cubes
- 4 tomatoes, chopped
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 c. herb seasoned stuffing mix
- 2 c. shredded cheese, divided
- In large skillet, heat margarine.
- Saute onion and pepper for three minutes.
- Add eggplant and mushrooms.
- Saute 3 minutes.
- Add tomatoes and seasonings.
- Cook 1 minute.
- Spread stuffing mix over bottom of casserole.
- Layer half the vegetable mix, one cup cheese and the remaining half of the vegetable mix.
- Cook 30 minutes at 350u0b0.
- Sprinkle with remaining cheese and bake 10 minutes longer.
