One Dish Chicken
- 3 chicken breast halvest medium potatoes peeled and cut into 1/4" slices
- Bertolli extra virgin olive oil
- Pam spray coatingtttttcCormick Herb Chicken Seasoning
- 4 medium carrots peeled and cut into 1/8" slicest tbsp. dried parsleyttt/4 cup grated cheese
- Salt & pepper to taste
- Preheat oven to 350. Spray the inside sides of a covered baking dish with Pam and add enough oil to cover bottom. Put carrots, potatoes, parsley, grated cheese, salt & pepper and a small amount of olive oil in a mixing bowl and mix well with hands or a wooden spoon. Add about half of this mixture to the bottom of the baking dish and layer with the chicken breast seasoned on both sides with the chicken seasoning, salt and pepper and olive oil. Add another layer of the potato mixture and cover. Cook for one hour.
- Note: If a covered baking dish is not available, use foil over another baking dish.
