Chipotle Basmati Lime Rice
- i used 2 bay leaves to 1 cup rice
- about 2 T. canola oil , 1 T butter
- about 1/2 lime squeezed
- about 1 heaping t kosher salt
- 1/4 C or more fresh cilantro chopped
- i worked with steve ells at stars in s.f and i was his marketing guru for chipotle before they went public. cilantro lime rice as follows:
- 1. rice to large rice cooker, add h20 (2:1 ratio h20 to rice). add 3-5 bay leaves. cook covered on med heat. we never peaked because it always came out perfect, plus we were so busy we never had time to. once rice is cooked it should have a somewhat dry, appearance to it NOT MUSHY. let cool for 5-10 mins add soy oil. let rest for 5-10 more min. scoop out into bowl to add final ingredients in order; lime juice, kosher salt, and lastly chopped fresh cilantro. adjust seasoning as needed.
