Pork Soup
- 3/4 lb. boneless pork
- 2 Tbsp. oil
- 1 medium onion, chopped
- 2 stalks celery, diced
- 3 cubes chicken bouillon
- 3 c. water
- 1/2 tsp. dried marjoram leaves
- 2 c. peeled and diced potatoes
- 1 (4 oz.) can mushroom pieces
- 1/2 medium green pepper, chopped
- 2 Tbsp. diced pimiento/parsley
- Cut pork in 1/2-inch cubes.
- Shake with flour in a plastic bag until coated.
- Heat oil in a 3-quart saucepan.
- Add pork.
- Brown lightly.
- Add onions; saute 2 to 3 minutes longer.
- Add celery, bouillon cubes, watter and marjoram.
- Bring to boiling, cover and simmer 15 minutes.
- Add potatoes and mushrooms to liquid.
- Bring to a boil again, cover and simmer for 10 minutes.
- Stir in green pepper and pimientos.
- Simmer for 5 minutes more.
- Sprinkle with parsley.
