Cheeseburger Muffins
- 2 C. All purpose flour
- 2 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1/2 tsp. Salt
- 1/2 C. Granulated sugar
- 2 Eggs
- 1 C. Light cream
- 1/3 C. Ketchup
- 1 C. Celery, chopped finely
- 1 Chicken burger, cooked and chopped finely
- 1/3 C. Spinach leaves, chopped finely
- Preheat oven to 375 degrees Fahrenheit
- Grease a 12 cup muffin pan and set aside
- In a large bowl combine cream and eggs together
- Stir with a wire whisk until mixture is frothy
- Pre cook spinach leaves in boiling salted water for a few minutes until mixture comes to a boil and then pour off excess water and set aside
- Add cooled chopped spinach leaves, ketchup, celery and cheese to egg mixture and mix until well combined
- Stir in dry ingredients with wire whisk and mix all together
- Pour batter into greased muffin cups filing 2/3 full and bake in oven for 20 minutes
- Place on a serving platter for dinner time
