Penne With Herbs And Tomatoes
- 8 ounces penne pasta
- 1 cup peas or green beans
- 3 tablespoons extra virgin olive oil
- 6 garlic cloves, sliced (minced for stronger flavor)
- 3 cups cherry or plum tomatoes, large slices
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup sliced basil leaves
- 2 tablespoons chopped parsley
- Parmesan or Romano cheese to top
- Cook pasta, adding vegetable during the last two minutes of cooking
- (Stir occasionally throught next steps to finish) Heat nonstick skillet over medium heat. Add oil to coat. Add garlic and cook until just brown, about 4 minutes. Increase heat to medium high and add tomatoes. Cook for 1 minute, add pasta mixture, salt and pepper until thoroughly heated. Remove from heat, stir in basil and parsley. Sprinkle with cheese.
