Tex-Mex Salad With Creamy Lime Dresing
- 1 can black beans, drained and rinsed
- 1 packet Sazon seasoning
- 8 oz M Jack cheese, shredded
- 1 c salsa
- 1 c halved cherry tomatoes
- 1 lb grilled chicken breasts, cubed
- 8 oz cheddar, shredded 5-6 strips pepper bacon, diced
- 1 avocado, cubed
- 1 head romaine, cut in strips
- 1 pkg tortilla salad strips
- CREAMY LIME DRESSING:
- 2 T chopped cilantro
- 1 T red wine vinegar
- 1 t lime zest
- 1/2 c sour cream
- 1 garlic clove, smashed
- 1 T honey
- 1/2 c olive oil
- s&p
- Blend all ingredients.
- Mix beans with Sazon; season with s&p
- Toss salsa with tomatoes
- Toss lettuce with 3/4 c dressing
- In clear trifle dish, layer the salad, beginning with black beans, followed by M Jack cheese, chicken, tomato salsa mixture, Cheddar, bacon, avocado, lettuce. Top with tortilla strips. Serve remaining dressing on the side.
