Time-Out Macadamia Cookies
- 1/2 c. butter or margarine, softened
- 1/2 c. vegetable shortening
- 3/4 c. firmly packed brown sugar
- 1/2 c. granulated sugar
- 1 egg
- 1 1/2 tsp. vanilla extract
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1- 6 oz. pkg. white baking chocolate, cut into chunks
- 1- 7 oz. jar macadamia nuts, coarsely chopped
- Preheat oven to 350 degrees.
- In a large bowl, cream butter, shortening and sugars until fluffy.
- Add egg and vanilla; beat until smooth.
- In a medium bowl, combine flour, baking soda and salt.
- Add dry ingredients to creamed mixture; stir until a soft dough forms.
- Stir in white chocolate and macadamia nuts.
- Drop teaspoonfuls of dough 2 inches apart onto an ungreased baking sheet.
- Bake 8 to 10 minutes or until lightly browned.
- Transfer cookies to a wire rack to cool.
- Store in an air tight container. Yields:
- about 4 1/2 dozen cookies.
