Lovejoy Pasta Salad
- 1 lb. (uncooked) Penne pasta
- 1 lb. fresh mozzarella bocconcini
- 1 can black olives
- 1 can artichoke hearts
- 1 pint grape (or cherry) tomatoes
- 1 cup italian dressing (or to taste)
- Bring water to a rapid boil in large saucepan. Add pasta and cook until al dente (still slightly firm).
- While pasta is cooking prepare other ingredients.
- Get a large mixing (or serving) bowl.
- Drain olives and cut in half, add to bowl.
- Wash tomatoes and cut in half, add to bowl.
- Drain artichoke hearts, cut into chunks (roughly quarters), add to bowl.
- Cut mozzarella balls in half, add to bowl.
- Add in pasta and dressing and toss all ingredients thoroughly.
- Can be served immediately or allowed to marinade for a short while. This will keep for several days if pasta is not overcooked and tomatoes are very firm.
- Drain pasta and rinse under cold water to stop the heating process.
