Pretty Fast & Tasty Pork And Pasta
- 1/2 pound 1 inch thick boneless pork chops.
- 2 cups ziti, cooked according to package directions.
- 2 TBLS. olive oil
- 1 TBLS. butter
- 2 crushed garlic cloves
- 2 scallions, thinly sliced
- 1/2 small red bell pepper, thinly sliced.
- salt
- pepper
- 1/2 tsp. hot red pepper flakes
- 1/2 c. orange juice
- 1/2 c. applesauce
- 1/3 c. light Soy Sauce with 1 TBLS. corn starch stirred till smooth.
- 1 c. peas (at room temp.)
- Cook the ziti and set aside.
- Slice the boneless pork against the grain in thin strips, discard the fat or gristle.
- Heat a wok, or large skillet over high heat and add the olive oil and butter. While that is heating, season the meat with salt and pepper. Add the meat, garlic, scallions and bell pepper to the wok. Stir constantly until the meat is done, about 2-3 minutes over medium high heat.
- Add the pasta and remaining ingredients, stir gently until all is heated through, about 5 minutes.
