Grilled Pork Tenderloin With Blackberry Marinade
- 2 lbs. pork tenderloin, cut into 3/4" medallions
- 1/4 cup blackberry syrup*
- 1/4 cup olive oil
- 1/3 cup white wine
- 2 tablespoons Dijon mustard
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon soy sauce
- 2 medium cloves garlic, crushed
- 2 dashes cayenne pepper
- 1/4 teaspoon black pepper
- 1 teaspoon chopped fresh rosemary
- Whisk marinade ingredients together in large bowl until thoroughly combined. Add the pork medallions and let marinade in refrigerator for 1-2 hours.
- Prepare grill.
- Grill pork medallions on preheated gas grill (or over glowing coals on a charcoal grill) until just cooked through, approximately 5 minutes on each side.
