Red Beans And Rice(Preparation Time: 10 Minutes And Cooking Time: 20 Minutes)
- vegetable cooking spray
- 6 oz. low-fat smoked sausage, sliced
- 1 c. chopped onion
- 3/4 c. chopped green pepper
- 1 clove garlic, minced
- 3 (16 oz.) cans red beans, drained
- 1 (14 1/2 oz.) can no-salt-added stewed tomatoes, chopped (undrained)
- 1 1/2 c. water
- 1 (6 oz.) can no-salt-added tomato paste
- 1/4 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1/4 tsp. hot sauce
- 1 bay leaf
- 4 c. cooked long grain rice, cooked without salt or fat
- Coat a Dutch oven with cooking spray over medium-high heat unti hot.
- Add sausage and next 3 ingredients.
- Saute until tender.
- Add beans and next 7 ingredients.
- Bring to a boil. Cover, reduce heat and simmer 20 minutes or until thoroughly heated.
- Remove and discard bay leaf.
- Serve over rice.
- Garnish with thyme sprigs, if desired.
- Yields 8 servings.
