Shrimp Toast
- 1/2 pound raw shrimp shelled
- 1/4 pound pork fat finely chopped
- 1/2 pound onions cut into very fine dice
- 1/3 teaspoon ginger juice
- 1 teaspoon white wine
- 1 1/2 teaspoons salt
- 1 1/4 teaspoons granulated sugar
- 1 teaspoon sesame oil
- 2 teaspoons oyster sauce
- pinch of white pepper
- 1 egg
- 3 1/2 tablespoons cornstarch
- 18 slices firm white bread
- 1 egg beaten
- 4 to 5 cups peanut oil for deep frying
- Shell shrimp devein wash dry and chop very fine. Combine with pork fat onions sugar ginger juice wine slat sesame oil oyster sauce pepper egg cornstarch. Mix in one direction with wooden spoon until thoroughly combined. Refrigerate 2 to 3 hours. or until mixture is thoroughly chilled. Trim crust from 8 slices bread cut each into four triangles. Place remaining bread and the bread crust on a baking sheet and bake in a 325 degree oven for 15 to 20 minutes or until it is hard and golden brown. Put this toast a few pieces at a time into a blender or food processor and blend until fine. You will have about 2 cups bread crumbs. Mound 1 tablespoon of the chilled filling into a pyramid shape mound. Press bread crumbs onto mixture and shake off excess. Heat fat from 325 to 350 degrees. Fry for 5 to 7 minutes or until golden brown. Serve immediately.
