Pam Luna'S Mexican Chicken
- 1 chicken
- 2 cans cream of chicken soup
- 1 can chicken broth
- 1 small jar pimentos
- 1 large jar Cheez Whiz
- 1 small onion, chopped
- 1 Tbsp. chili powder
- 1 can chopped green chilies
- 1 chopped jalapeno pepper
- 1 large bag Doritos tortilla chips
- Boil and debone the chicken.
- Combine the soups, broth, pimentos, Cheez Whiz, onion, chili powder, green chilies and jalapeno pepper in a large saucepan.
- Cook until heated thoroughly.
- Line a 9 x 13-inch baking dish with 1/2 bag of tortilla chips.
- Add the deboned chicken to the saucepan and pour this mixture over the chips.
- Top with remaining chips.
- Bake in a 350u0b0 oven until it bubbles, about 20 to 25 minutes.
