Beef Brochette With Gorgonzola Mayonaise

  1. Sauce:
  2. Put mayo, roasted peppers, Gorgonzola and chopped shallots in a processor and puree
  3. Marinate:
  4. Combine olive oil and herbs then toss with rough chopped beef and allow to marinate 1 - 3 hours
  5. Slice Baguette on the diagonal. Brush with olive oil and garlic mixture and toast in 350 deg. oven for 10 minutes or until lightly toasted
  6. Assembly:
  7. Place arugla leaf or spinanch leaf on baguette.
  8. Top TBS of chopped beef on leaf then top with tsp of mayonaise mixture.
  9. Cover and refrigerate. Can be made 2 hours ahead.
