Beef Brochette With Gorgonzola Mayonaise
- Sauce:
- 1 cup Mayonnaise
- 3/4 jar roasted red peppers
- 1/2 cup creamy gorgonzola cheese
- 1/4 cup chopped shallots
- Beef:
- 1# deli beef
- 1/4 olive oil
- 2 TBS minced parsley
- 1 TBS minced thyme
- T TBS minced rosemary
- 1/4 tsp red pepper flakes
- 1 baguette
- 1 clove garlic chopped and 1/3 cup of olive oil
- 2 cups spinich or arugla
- Sauce:
- Put mayo, roasted peppers, Gorgonzola and chopped shallots in a processor and puree
- Marinate:
- Combine olive oil and herbs then toss with rough chopped beef and allow to marinate 1 - 3 hours
- Slice Baguette on the diagonal. Brush with olive oil and garlic mixture and toast in 350 deg. oven for 10 minutes or until lightly toasted
- Assembly:
- Place arugla leaf or spinanch leaf on baguette.
- Top TBS of chopped beef on leaf then top with tsp of mayonaise mixture.
- Cover and refrigerate. Can be made 2 hours ahead.
