Healthy Steamed Corned Beef & Cabbage
- 3 lbs beef loin, cut into 6 individual pieces
- 1 onion, sliced thinly
- 1 sliced shallot
- 4 bay leaves
- 3 sticks cinnamon
- 4 ribs celery
- 1 head garlic, whole cloves
- 1 small head of cabbage
- Marinade
- 4 tbsp garlic olive oil
- 2 tbsp sugar
- 3 tbsp cider vinegar
- pepper to taste
- 1 tsp ground cinnamon
- 2 tbsp kosher salt
- 1 1/2 tbsp mustard seeds
- 1 tsp ground cloves
- 1/2 tsp ground ginger
- Combine ingredients of marinade and add beef. Marinate beef for at least 2 hours (overnight is better). Layer the bottom of the steamer shelves with cabbage leaves. Layer remaining ingredients evenly throughout steamer. Steam for 30 - 40 min.
