Tofu Avocado Wraps
- Sauce:
- 1 avocado
- 1 clove garlic
- 2 tablespoons fresh lime juice
- 1/4 tsp salt, if desired
- generous grinding of black pepper
- 1/3 cup plain yogurt
- Wraps:
- 1 pkg (8 oz)seasoned baked tofu, any flavor
- 2 cups cooked brown rice
- 1 can black-eyed peas
- 2 tsp chili powder
- 8 whole wheat tortillas
- Make sauce first: mash avocado with fork until smooth. Stir in garlic, lime juice, salt and pepper to taste. Stir in yogurt. Set aside.
- During last 15 minutes of cooking the rice, wrap tortillas in foil and heat in 350 degree oven for about 10 minutes. .Dice tofu into 1/4 inch cubes. Rinse beans in colander under hot water to warm slightly. When rice is done, combine rice, tofu, beans and chili powder.
- Assemble wraps by spreading 2 tablespoons of sauce down middle of each tortilla. Fill with about 1/2 cup of rice mixture. Wrap up and enjoy!
- These are also delicious cold - assemble any leftovers, wrap individually in plastic wrap and have ready for a healthy, grab-and-go lunch
