Tofu Avocado Wraps

  1. Make sauce first: mash avocado with fork until smooth. Stir in garlic, lime juice, salt and pepper to taste. Stir in yogurt. Set aside.
  2. During last 15 minutes of cooking the rice, wrap tortillas in foil and heat in 350 degree oven for about 10 minutes. .Dice tofu into 1/4 inch cubes. Rinse beans in colander under hot water to warm slightly. When rice is done, combine rice, tofu, beans and chili powder.
  3. Assemble wraps by spreading 2 tablespoons of sauce down middle of each tortilla. Fill with about 1/2 cup of rice mixture. Wrap up and enjoy!
  4. These are also delicious cold - assemble any leftovers, wrap individually in plastic wrap and have ready for a healthy, grab-and-go lunch
