Hot Chicken Salad

  1. If using a chicken breast, slice raw breast into thick slices. Fry bacon until crispy and set aside on paper towels. Saute the chicken breast in the bacon fat until cooked through. Remove chicken. In the same pan, stir in green onions, garbanzo beans, vinegar, sugar, mustard and 1/4 cup of water. Bring to a boil. Put the chicken back in and heat through. Arrange the lettuce on plates (lettuce must be dry and crisp), peel and slice avocados and arrange on top of lettuce in a pinwheel pattern. Divide the chicken mixture evenly between the plates on top of the lettuce ensemble. Crumble and sprinkle the bacon on top.
